- Preheat your oven to 375°F (190°C). Gather your ingredients.
- In a large skillet, heat olive oil over medium heat. Add sliced kielbasa and cook until browned, about 5 to 7 minutes. Remove and set aside.
- In the same skillet, add more olive oil if needed, then add diced onion. Sauté for 3 to 4 minutes until translucent. Stir in minced garlic and cook for 1 minute.
- In a medium bowl, combine sour cream, heavy cream, paprika, salt, and black pepper. Stir until smooth.
- Lightly grease a 9x13-inch baking dish and layer half of the sliced potatoes, half of the kielbasa, sautéed onions, garlic, and half of the cheddar cheese.
- Repeat layers with remaining potatoes, kielbasa, onion, garlic, cream mixture, and top with remaining cheddar cheese.
- Cover the baking dish with aluminum foil and bake for 40 minutes.
- Remove foil and bake for an additional 10 to 15 minutes until cheese is bubbly and golden brown.
- Let the casserole cool for 5 to 10 minutes before serving.
- Garnish with fresh parsley before serving warm.
