  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Add chopped carrots, diced onion, and celery stalk; season with salt and pepper. Sauté for about 8 minutes until translucent.
  3. Pour in white wine vinegar and stir well; cook for 1 additional minute.
  4. Add diced tomatoes, vegetable broth, drained beans, grated garlic, diced Yukon Gold potatoes, chopped cabbage, and thyme. Stir everything together.
  5. Cover and let simmer on medium-low heat for 20 to 30 minutes until vegetables are tender.
