  • 1 pound boneless, skinless chicken breasts
  • 2 cloves garlic (minced)
  • 1 tablespoon ginger (grated)
  • 1 tablespoon lime juice freshly squeezed
For the Sauce
  • 1 cup coconut milk (light)
  • 2 tablespoons soy sauce or Tamari for gluten-free
For the Rice Bowl Base
  • 4 cups cooked rice (jasmine or basmati) leftover works perfectly
  • 1 tablespoon vegetable oil (or coconut oil)
For Seasoning
  • salt and pepper to taste
For Garnish
  • fresh cilantro (or green onions, chopped) basil could be an alternative

Method
 

Step-by-Step Instructions
  1. Heat 1 tablespoon of vegetable or coconut oil in a non-stick skillet over medium heat for about 1-2 minutes.
  2. Add 2 cloves of minced garlic and 1 tablespoon of grated ginger to the skillet, sauté for about 1 minute until fragrant and golden.
  3. Add 1 pound of diced boneless, skinless chicken breasts to the skillet and cook for approximately 5-7 minutes until the chicken is no longer pink.
  4. Pour in 1 cup of light coconut milk and 2 tablespoons of soy sauce, stir well and let simmer for 2-3 minutes.
  5. Season with salt and pepper to taste, add the juice of half a lime and cook for an additional minute.
  6. Serve the coconut chicken over 4 cups of cooked rice, spooning the sauce over the rice.
  7. Sprinkle chopped fresh cilantro or green onions on top for garnish.
