Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, cinnamon, and salt.
  3. Cream the butter, granulated sugar, and brown sugar in a large mixing bowl until fluffy.
  4. Add the egg and vanilla to the butter mixture, beating until combined.
  5. Gradually mix in the dry ingredients until just combined to form a soft dough.
  6. In a small bowl, mix brown sugar and cinnamon for the filling.
  7. Roll half of the dough into a 9x12-inch rectangle, sprinkle filling, and roll into a log.
  8. Repeat with the remaining dough and filling.
  9. Chill dough logs in the refrigerator for about 30 minutes.
  10. Slice chilled logs into ½ to 1-inch rounds and place on baking sheets.
  11. Bake for 10 to 12 minutes until edges are golden and centers remain soft.
  12. Cool on baking sheets for 5 minutes before transferring to a wire rack.
