Step-by-Step Instructions for Cinnamon Roll Banana Bread
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, mash 3-4 very ripe bananas until smooth. Stir in 1/3 cup of melted butter, then add two eggs and a splash of vanilla extract.
  3. In a separate bowl, whisk together 1.5 cups of flour, 1 cup of brown sugar, 1 teaspoon of cinnamon, and 1 teaspoon of baking powder.
  4. Fold the dry mixture into the wet banana mixture using a spatula until just combined.
  5. In a small bowl, mix together 0.25 cups of brown sugar and 1 tablespoon of cinnamon for the cinnamon swirl.
