Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C). Grease an 8x8 inch square baking dish lightly.
  2. In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, and salt.
  3. In a separate bowl, whisk together the egg, milk, maple syrup or honey, melted butter (or coconut oil), and vanilla extract until smooth.
  4. Pour the wet mixture into the bowl with the dry ingredients, and gently fold together until just combined.
  5. In a small bowl, mix the melted butter or coconut oil with brown sugar and a sprinkle of cinnamon to create the swirl.
  6. Spread the oatmeal mixture evenly into the prepared baking dish. Drizzle the cinnamon swirl mixture over the top and gently swirl it in.
  7. Bake for 25-30 minutes until golden and a toothpick inserted comes out mostly clean.
  8. Allow to cool for about 10 minutes before cutting into squares.
