- Preheat your oven to 350°F (175°C). Grease an 8x8 inch square baking dish lightly.
- In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, and salt.
- In a separate bowl, whisk together the egg, milk, maple syrup or honey, melted butter (or coconut oil), and vanilla extract until smooth.
- Pour the wet mixture into the bowl with the dry ingredients, and gently fold together until just combined.
- In a small bowl, mix the melted butter or coconut oil with brown sugar and a sprinkle of cinnamon to create the swirl.
- Spread the oatmeal mixture evenly into the prepared baking dish. Drizzle the cinnamon swirl mixture over the top and gently swirl it in.
- Bake for 25-30 minutes until golden and a toothpick inserted comes out mostly clean.
- Allow to cool for about 10 minutes before cutting into squares.
