Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a mini muffin pan.
  2. In a large bowl, mix cottage cheese, rolled oats, applesauce, egg, cinnamon, honey or maple syrup, baking powder, and salt until well combined.
  3. Allow the batter to rest for 5 minutes to let the oats absorb moisture.
  4. Scoop the batter into the mini muffin pan, filling each cup nearly to the top and optionally adding oats or nuts on top.
  5. Bake for 18–20 minutes or until golden on top and set.
  6. Let cool for a few minutes before transferring to a wire rack to cool completely.
  7. Serve warm or store in an airtight container in the fridge for up to 4 days.
