- Preheat your oven to 350°F (175°C) and prepare a mini muffin pan.
- In a large bowl, mix cottage cheese, rolled oats, applesauce, egg, cinnamon, honey or maple syrup, baking powder, and salt until well combined.
- Allow the batter to rest for 5 minutes to let the oats absorb moisture.
- Scoop the batter into the mini muffin pan, filling each cup nearly to the top and optionally adding oats or nuts on top.
- Bake for 18–20 minutes or until golden on top and set.
- Let cool for a few minutes before transferring to a wire rack to cool completely.
- Serve warm or store in an airtight container in the fridge for up to 4 days.
