Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, ground cloves, and ground nutmeg.
  3. In a large bowl, combine the cooking oil, eggs, sugar, vanilla extract, and pumpkin puree. Mix together until smooth.
  4. Gradually fold the dry mixture into the wet mixture, stirring gently until just combined.
  5. Gently fold in 1 cup of chocolate chips into your batter. Set aside a small handful of chocolate chips for later.
  6. Spray your 8"x4"x3" loaf pan with cooking oil or line with parchment paper. Pour the batter in and smooth the top.
  7. Sprinkle the remaining 1/4 cup of chocolate chips over the top of the batter.
  8. Bake in the preheated oven for 50-60 minutes. Check for doneness with a toothpick.
  9. Let it cool in the pan for about 10 minutes before transferring to a wire rack.
