Step-by-Step Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, ground cloves, and ground nutmeg.
- In a large bowl, combine the cooking oil, eggs, sugar, vanilla extract, and pumpkin puree. Mix together until smooth.
- Gradually fold the dry mixture into the wet mixture, stirring gently until just combined.
- Gently fold in 1 cup of chocolate chips into your batter. Set aside a small handful of chocolate chips for later.
- Spray your 8"x4"x3" loaf pan with cooking oil or line with parchment paper. Pour the batter in and smooth the top.
- Sprinkle the remaining 1/4 cup of chocolate chips over the top of the batter.
- Bake in the preheated oven for 50-60 minutes. Check for doneness with a toothpick.
- Let it cool in the pan for about 10 minutes before transferring to a wire rack.
