  • 1 medium Cucumber Sliced for added crunch.
  • 1/2 cup Grated cheese Optional, can use cheddar or feta.
For the Sauce
  • 1 cup Greek yogurt Healthier alternative to mayo.
  • 1 tbsp Mustard Dijon for a sophisticated twist.
  • to taste Salt and pepper
  • 1 tsp Chili powder Optional, for heat.

Method
 

Step-by-Step Instructions
  1. Cook the chicken breast, season with salt and pepper, grill or bake at 375°F for 20-25 minutes until fully cooked. Shred while warm.
  2. Mix Greek yogurt, mustard, lemon juice, with salt, pepper, and spices in a bowl for the sauce.
  3. Wash and chop lettuce, slice tomatoes, and chop cucumber. Set aside.
  4. Spread the sauce over the tortilla, layer with lettuce, chicken, avocado, tomatoes, cucumber, and cheese.
  5. Fold tortilla sides inward and roll tightly from the bottom up. Slice in half diagonally.
  6. Serve immediately on a plate, optionally with a side of dipping sauce or salad.
