  1. Preheat the oven to 400°F (200°C).
  2. Scrub and dry the Russet potatoes, pierce them with a fork, rub with olive oil, and season with salt and pepper.
  3. Place the prepared potatoes on a baking sheet and bake for 45-60 minutes until fork-tender.
  4. While the potatoes bake, heat a skillet over medium heat and brown the ground beef for about 5-7 minutes, draining excess fat.
  5. Add the taco seasoning and a splash of water to the beef, allowing it to simmer for about 5 minutes.
