For the Meatloaf
  • 2 pounds Ground Beef Use lean ground beef for moisture
  • 1 cup Breadcrumbs Use gluten-free breadcrumbs if needed
  • 1 large Egg Can substitute with flaxseed meal for vegan
  • 1/2 cup Milk Substitute with almond milk for dairy-free
  • 1 medium Onion Shallots or leeks can be used
  • 1 teaspoon Garlic Powder Fresh minced garlic can be used
  • 1 teaspoon Salt Adjust to taste
  • 1/2 teaspoon Black Pepper Adjust to taste
  • 1 tablespoon Worcestershire Sauce Soy sauce mixed with vinegar can substitute
  • 1/2 cup Ketchup BBQ sauce can be used for a smoky twist
For the Topping
  • 4 cups Mashed Potatoes Cauliflower mash can be used for low-carb
  • 2 cups Cheddar Cheese Mozzarella or pepper jack also work
  • 1 cup Bacon Skip for vegetarian version or use turkey bacon
For the Garnish
  • 1/4 cup Green Onions/Chives Parsley can be used as a substitute

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, egg, milk, diced onion, garlic powder, salt, pepper, Worcestershire sauce, and half of the ketchup.
  3. Transfer the meat mixture to the greased baking dish and spread it evenly. Top with remaining ketchup.
  4. Bake for 20-25 minutes or until the internal temperature reaches 160°F (71°C).
  5. Once baked, spoon the mashed potatoes over the meatloaf and top with cheddar cheese and bacon.
  6. Return to the oven for an additional 10-15 minutes until cheese is bubbly and golden. Optionally broil for the last 1-2 minutes.
  7. Let rest for 5 minutes and garnish with green onions or chives before serving.
