- Begin by heating a non-stick skillet over medium heat. Add a small pat of butter and let it melt until it bubbles.
- Crack one of the large eggs directly into the skillet, seasoning it with salt and pepper. Cook for about 3-4 minutes until the whites are fully set but yolk remains runny.
- With the skillet still warm, lay one flour tortilla flat in the pan. Sprinkle half of the shredded cheese evenly over the tortilla.
- Carefully place the fried eggs over the melted cheese, followed by slices of avocado. Top with the remaining half of the shredded cheese.
- Place the second tortilla on top of the filled quesadilla, gently pressing down. Cook for 2-3 minutes until golden brown.
- Once fully cooked, remove the quesadilla from the skillet and slice it into wedges. Serve immediately while hot.
