Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather baking equipment, including a lined baking sheet.
  2. In a small pot, heat oil and sauté crushed garlic for 2-3 minutes until fragrant. Add whole milk and Guinness, simmering gently.
  3. Whisk in the cream cheese until smooth, then gradually add sharp cheddar, mozzarella, and Dubliner or Gruyere, cooking until melted.
  4. Divide refrigerated biscuit dough in half, rolling into small balls. Use flour on your hands to avoid sticking.
  5. Bring water and baking soda to a boil. Drop the biscuit balls for 1 minute until they puff, then place on the baking sheet.
  6. Whisk the egg and brush over pretzel dough balls. Sprinkle with coarse salt.
  7. Pour the creamy cheese dip into the center of the skillet, sprinkle remaining cheese on top.
  8. Bake for 32-35 minutes until golden brown and bubbling. Keep an eye on the biscuits to avoid burning.
