  • 1 teaspoon Allspice

  • 2 tablespoons Tomato Paste
  • 4 cups Beef Broth low-sodium preferred
  • 2 cups Yukon Gold or Baby Potatoes chopped
  • 1 cup Bell Peppers diced
  • 2 medium Carrots sliced
  • 2 cups Long Grain White Rice
  • 1 leaf Bay Leaves remove before serving
  • 1 optional Scotch Bonnet for heat, adjust to preference

Method
 

Step-by-Step Instructions
  1. In a large pot, heat oil over medium heat. Add diced onion, minced garlic, and chopped scallions, stirring until softened and fragrant, about 5 minutes.
  2. Add beef stew meat to the pot and sear on all sides for 8–10 minutes until browned.
  3. Sprinkle in paprika, fresh thyme, allspice, and ginger. Add tomato paste and stir for 1–2 minutes until fragrant.
  4. Pour in beef broth, scraping up browned bits. Add chopped potatoes, diced bell peppers, and sliced carrots. Season with salt and pepper.
  5. Bring to a gentle simmer over high heat. Cover and reduce heat to low, cooking for about 2 hours.
  6. While the stew simmers, prepare long-grain white rice according to package instructions.
  7. Taste and adjust seasonings. Remove bay leaves and serve the stew over rice.
