Step-by-Step Instructions
  1. Thaw the puff pastry until pliable and preheat your oven to 375°F (190°C). Roll out the pastry and cut into desired shapes.
  2. In a skillet, add olive oil and butter. Once melted, add onions, sugar, salt, and pepper. Cook for 25-30 minutes until caramelized.
  3. Combine warm caramelized onions with goat cheese and thyme in a mixing bowl. Add heavy cream if desired.
  4. Spoon the onion and cheese mixture into pastry shells, ensuring not to overfill. Arrange on a baking sheet.
  5. Brush edges with beaten egg and bake for 20-25 minutes until puffed and golden brown.
  6. Remove from oven, cool slightly, and serve garnished with honey and fresh thyme.
