  • 1 cup unsalted butter melted
  • 2 cups all-purpose flour
  • 0.5 cup granulated sugar
For the Filling
  • 8 oz cream cheese at room temperature
  • 0.75 cup granulated sugar adjust to taste
  • 1 tablespoon lemon zest fresh
  • 0.5 cup lemon juice freshly squeezed
  • 2 large eggs at room temperature
  • 2 cups blueberries fresh or frozen

Method
 

Preparation Steps
  1. Preheat your oven to 350ºF (177ºC).
  2. Line an 8"x8" or 9"x9" baking pan with aluminum foil, grease lightly.
  3. In a mixing bowl, combine melted butter, flour, and sugar until crumbly. Press into the baking pan.
  4. Bake the crust for 10 to 12 minutes until lightly golden, then cool.
  5. Beat cream cheese and sugar until smooth. Add lemon juice and zest, mixing well. Add eggs one at a time.
  6. Gently fold in blueberries into the filling mixture.
  7. Pour the filling over the cooled crust and bake for 25 to 30 minutes until the edges are set.
  8. Cool completely in the pan on a wire rack, then lift out and cut into squares.
