Ingredients
  

For the Chicken
  • 1 lb boneless, skinless chicken breasts sliced thinly
  • 2 tbsp cornstarch
  • 1/2 tsp salt adjust to taste
  • 1 tsp freshly ground black pepper tellicherry recommended
For the Vegetables
  • 1 medium onion sliced
  • 1 cup bell pepper red or green, sliced
  • 1 cup mushrooms shiitake or button, sliced
  • 3 cloves garlic minced
  • 2 tbsp green onions chopped, for garnish
For the Sauce
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce or vegetarian version
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar or apple cider vinegar
  • 2 tbsp vegetable oil for stir-frying

Method
 

Steps
  1. Mix sliced chicken breasts, cornstarch, salt, and black pepper in a medium bowl; let sit for 10 minutes.
  2. Heat vegetable oil in a large skillet over medium-high heat and stir-fry chicken for 4-5 minutes until golden brown.
  3. In the same skillet, add more oil and stir-fry onion and bell pepper for 2-3 minutes, then add mushrooms and garlic; cook until tender.
  4. Whisk soy sauce, oyster sauce, honey, rice vinegar, and black pepper in a small bowl.
  5. Add sauce to skillet with vegetables, return chicken, and mix for 1-2 minutes until heated through.
  6. Transfer to a serving dish, garnish with green onions, and serve hot over jasmine rice or noodles.
