  • 24 oz Frozen Peas Thaw completely before use.
  • 3 pieces Hard-Boiled Eggs Chopped into 1/2-inch pieces.
  • 4 pieces Bell Peppers Diced into 1/4-inch pieces.
  • 1.5 cups Irish Cheese Shredded or cubed, preferably Kerrygold Dubliner.
For the Dressing
  • 1/2 cup Mayonnaise Use Hellmann's for best results.
  • 1/4 cup Relish
  • 1.5 tsp Salt Adjust to taste.
  • 2.5 tsp Mustard
  • 1 tsp Thyme
  • 1/4 tsp Black Pepper

Preparation Steps
  1. Hard-Boil the Eggs. Place eggs in a pot with water, bring to a boil, cover, and let sit for 10 minutes. Cool and chop.
  2. Soak the Onions. Finely dice the onion and soak in 1/2 cup of water for 5 minutes, drain well.
  3. Prepare the Bell Peppers. Dice the bell peppers into 1/4-inch pieces.
  4. Shred the Irish Cheese. Shred or cube the Kerrygold Dubliner cheese.
  5. Make the Creamy Dressing. Mix mayonnaise, relish, mustard, salt, thyme, and black pepper in a bowl.
  6. Combine Salad Ingredients. Fold together onions, peas, eggs, peppers, and cheese in a bowl.
  7. Dress the Salad. Pour the dressing over and gently fold together.
  8. Let the Flavors Meld. Cover and refrigerate for at least 30 minutes before serving.
