Step-by-Step Instructions
  1. Preheat your oven to 375ºF (190ºC).
  2. In a large baking dish, combine diced zucchini, bell pepper, chopped onions, and grape tomatoes. Sprinkle in Italian seasoning, garlic powder, and season generously with salt and pepper. Drizzle olive oil over the top, mixing everything together until the veggies are nicely coated.
  3. Place the baking dish in the preheated oven and bake uncovered for about 20 minutes.
  4. Carefully remove the dish from the oven and sprinkle the remaining shredded mozzarella evenly over the top.
  5. Return the dish to the oven and bake for an additional 10 minutes until the cheese is bubbly and golden brown.
  6. Remove the dish from the oven and let it rest for a minute. Optionally, sprinkle with fresh parsley and chili flakes before serving.
