For the Potatoes
  • 4 large Baking Potatoes Can swap with sweet potatoes for extra sweetness
  • 2 tbsp Olive Oil Extra virgin preferred for richer flavor
  • 1 tsp Salt Adjust according to feta's saltiness
  • 1 tsp Black Pepper Freshly cracked is preferred
For the Feta Mixture
  • 200 g Feta Cheese Feel free to substitute with goat cheese or vegan cheese
  • 1 tsp Dried Thyme Dried rosemary can be used instead
  • 1 tsp Dried Oregano Adds depth to the dish
  • 1/2 tsp Red Chilli Flakes Adjust to your spice preference
For the Zesty Finish
  • 1 head Garlic Top cut off, roasted
  • 1 whole Lemon Quartered, squeeze over potatoes
  • 1 tbsp Honey Optional, adjust to taste
  • 1/4 cup Fresh Basil Chopped, for garnish

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 200°C (390°F). Gather your baking dish and ingredients.
  2. Wash and cube the potatoes. Bring salted water to a boil and par-boil for 6-10 minutes until slightly tender. Drain and steam dry.
  3. In a large baking dish, combine potatoes with olive oil, thyme, oregano, salt, and pepper. Toss to coat and roast for 30-40 minutes until golden and crispy.
  4. Add feta cheese in the center and pour the juice of half the lemon over it. Return to oven.
  5. Roast for another 15 minutes until feta softens and browns slightly.
  6. Squeeze roasted garlic into a bowl and mash into a paste.
  7. Mix together the potatoes, mashed garlic, chopped basil, and remaining lemon juice.
  8. Drizzle with honey if desired and garnish with fresh basil before serving.
