- Preheat your oven to 200°C (390°F). Gather your baking dish and ingredients.
- Wash and cube the potatoes. Bring salted water to a boil and par-boil for 6-10 minutes until slightly tender. Drain and steam dry.
- In a large baking dish, combine potatoes with olive oil, thyme, oregano, salt, and pepper. Toss to coat and roast for 30-40 minutes until golden and crispy.
- Add feta cheese in the center and pour the juice of half the lemon over it. Return to oven.
- Roast for another 15 minutes until feta softens and browns slightly.
