- In a mixing bowl, combine granulated white sugar, sesame seeds, crushed garlic, and chopped green onions. Stir in soy sauce, rice vinegar, Chinese chili oil, and sesame oil. Whisk until the sugar dissolves and ingredients are blended.
- Trim both ends of each cucumber. Use chopsticks to control cutting depth and make diagonal slices along the cucumber to create spirals.
- Transfer cucumber spirals into a bowl and sprinkle salt over them. Massage the salt into the cucumbers for about a minute. Let sit for 8-10 minutes to draw out moisture.
