Ingredients
  

For the Chicken
  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder adjust to taste
  • to taste salt & pepper
  • 2 tablespoons olive oil can substitute with avocado oil
For the Skillet
  • 1 medium onion yellow or white
  • 1 can Ro-tel Diced Tomatoes & Green Chilies can substitute with any canned diced tomatoes
  • 1 can black beans can substitute with pinto or refried beans
  • 1 cup corn frozen corn works as well
  • 1 teaspoon smoked paprika regular paprika can be used in a pinch
For Topping
  • 1 cup Mexican cheese blend can substitute with cheddar or Monterey Jack
  • to taste fresh cilantro omit if desired

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C) and position the oven rack in the middle.
  2. Slice the chicken breasts into four cutlets. Season with garlic powder, chili powder, salt, and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Add the chicken and pan-fry for 3-4 minutes on each side until golden brown.
  4. Remove the chicken and set aside. In the same skillet, sauté chopped onions for about 5 minutes until soft.
  5. Add Ro-tel tomatoes, black beans, corn, and smoked paprika to the onions. Heat through for 3-4 minutes.
  6. Return the chicken to the skillet and spoon the bean and corn mixture over it. Sprinkle cheese on top.
  7. Bake in the oven for 5-7 minutes until the chicken reaches 165°F and the cheese is melted.
  8. Garnish with chopped cilantro before serving.
