- Preheat your oven to 400°F (200°C) and position the oven rack in the middle.
- Slice the chicken breasts into four cutlets. Season with garlic powder, chili powder, salt, and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat. Add the chicken and pan-fry for 3-4 minutes on each side until golden brown.
- Remove the chicken and set aside. In the same skillet, sauté chopped onions for about 5 minutes until soft.
- Add Ro-tel tomatoes, black beans, corn, and smoked paprika to the onions. Heat through for 3-4 minutes.
- Return the chicken to the skillet and spoon the bean and corn mixture over it. Sprinkle cheese on top.
- Bake in the oven for 5-7 minutes until the chicken reaches 165°F and the cheese is melted.
- Garnish with chopped cilantro before serving.
